Waffle Cookies
makes 120 cookies
1 3/4 C sugar
1 Dozen eggs at room temp
3 3/4 C flour
1 1/3 C oil
1tsp baking powder
1/2 tsp salt
2 tsp almond flavoring (or other to taste)
Beat eggs until light and fluffy. Add sugar oil and extract. sift dry ingredients together and gently mix into the eggs.
The batter should resemble cake batter. Drop by teaspoon onto hot waffle iron and cook 15-30 seconds per side.
Remove cookie (I use a knife) and lay on a paper towel to cool flat for a min. Then stack cookies to store in a tin with paper towels to keep dry.
Makes 120 of my grandmas super thin iron cookies... Many modern irons are thicker and make only 60 cookies.
Freeze extras.

Thank you for posting the recipies Charlotte
